Pro Tips:

  • Use Castelvetrano olives in combination with your Kalamata

Ingredients:

  • Chickpeas (drained + rinsed)
  • White rice
  • Olives (I use Kalamata & Castelvetrano)
  • Cherry tomatoes (halved)
  • Bell peppers, green onion, & fresh Italian parsley
  • Lemon Juice

Process:

  • While your rice is cooking, air fry your chickpeas on 400 for 12 minutes
  • Toss tomatoes, olives, green onion and parsley in EVOO, lemon juice, salt + pepper
  • Combine rice, chickpeas, and cold tomato salad! Top with green onion
